California Caviar is our West Coast interpretation of Texas Caviar, the classic bean salsa traditionally eaten with tortilla chips. Texas Caviar is usually made with smoky black eyed peas, but we use black beans and edamame. Creamy diced avocado adds richness to the dish. Trader Joe’s flavorful Corn and Chile Tomato-less Salsa add texture and a sweet-spicy punch of flavor.
This easy recipe is from our Trader Joe’s Vegetarian cookbook.
Ingredients
- 1 (15-oz) can black beans, rinsed and drained
- 1 (9-oz) pkg shelled edamame
- 1 (13.75-oz) jar Corn and Chile Tomato-less Salsa
- 1 ripe avocado, diced
Instructions
- Stir together all ingredients in a medium serving bowl or platter.
Prep time: 5 minutes

i just bought your Cooking With Trader Joe’s Cookbook – Skinny Dish
I am 5’1.5″… woukd like to lose about 12 lbs. Your meals look great. My concern is oil.. fear of the added oils adding weight. Wondering if added oil actually helps weight loss.
Are the recipes universal regardless of height and size.

Hi Beth, Glad you picked up Skinny Dish! Added oil has been proven to help weight loss, generally speaking, especially healthy oils from healthy sources such as olive oil, avocado, nuts, etc. For example, in a weight loss study, two groups ate the same diet but one group ate an additional handful of almonds every day. Almonds are not a low-calorie food and they have lots of fat, but the study showed that the group that ate the almonds actually lost more weight. I am 89 years old. I am still cooking. I need a skillet like an old fashioned cast iron skillet. but not that heavy. can you recommend one under 50 dollars.

My favorite cast iron skillet is the Lodge brand, and they are very affordable. Amazon has the 12-inch skillet for $25 https://www.amazon.com/Lodge-Seasoned-Cast-Iron-Skillet/dp/B00006JSUB and the 10-inch skilled for $15 https://www.amazon.com/Lodge-L8SK3-4-Inch-Pre-Seasoned-Skillet/dp/B00006JSUA Like all cast iron skillets they are heavy, so I would probably go with the 10-inch instead of the 12 inch.
