Arlettes are a crunchy cinnamon cookie made with flattened swirls of puff pastry. They are similar to palmiers and very easy to make when you use ready-made frozen puff pastry.
The puff pastry is thawed, layered with cinnamon sugar, and then rolled and sliced. The slices are flattened and baked until the puff pastry is crunchy and the cinnamon sugar is caramelized. They are delicious and simple.
- 1 sheet frozen puff pastry, thawed according to package instructions
- 1/3 cup sugar
- 1 tsp cinnamon
Combine sugar and cinnamon. Set aside.
Unroll puff pastry sheet onto floured working surface (or use sheet of parchment paper). Sprinkle and spread half of cinnamon sugar mixture onto half of the puff pastry sheet. Fold puff pastry over. Spread remaining sugar on puff pastry. Roll the puff pastry into a tight roll, wrap in parchment paper or plastic wrap and place in freezer for 20 minutes. Preheat oven to 400 degrees F.
Remove puff pastry from freezer, unwrap, and cut into 1/2-inch slices. Using floured surface, roll each slice into an oval about 5 inches long. Place on baking sheet lined with Silpat baking mat or parchment paper, about 1 inch apart. I placed 6 cookies on each baking sheet.
Bake for 15-20 minutes until the cookies are very golden and starting to brown on edges (see main photo for reference). As they bake, they will slightly puff and shrink. Cool and serve.
