Shrimp Mango Salad
Shrimp and langostino tails are
dressed in a light citrus dressing in this colorful salad. The burst
of mango flavors and creamy avocado textures really jazz up this
healthy version of the classic shrimp salad.
1/2 lb frozen medium tail-off cooked shrimp, thawed
1/2 lb frozen cooked langostino tails, thawed
(or 1 lb cooked shrimp total)
2 cups mango chunks
1/2 bag baby spinach (3 oz)
1 ripe avocado, diced
1/2 cup chopped cilantro
Dressing:
3 Tbsp Extra virgin olive oil
3 Tbsp lemon juice
3 Tbsp lime juice
1 Tbsp agave nectar or honey
1/2 tsp each salt and pepper
1. In a large bowl, combine shrimp, langostino tails, mango, spinach, avocado, and cilantro.
2. Whisk together ingredients for dressing. Pour over salad and gently toss to combine. Serve chilled. |

Mushroom Basil Frittata
A
frittata is similar to a quiche, but without the crust. This version
uses criminis, which are actually baby Portabella mushrooms. For a
milder flavor, you can use buttom mushrooms, or really any vegetables
of your choice.
3 cups fresh Sliced Crimini Mushrooms
3 Tbsp butter
8 eggs
1/3 cup whole milk or heavy cream
1/2 tsp salt
1/4 tsp black pepper
1/2 cup fresh basil leaves, roughly chopped
1/2 cup Quattro Formaggio shredded cheese
1. Preheat oven to 350 degrees F.
2. Melt butter in a 10-inch nonstick oven-safe skillet over medium heat. Add mushrooms and cook for 5 minutes
3. While mushrooms are cooking, whisk eggs, milk, salt, and pepper until combined. Mix in basil and cheese.

Pour egg mixture into hot skillet, over the cooked mushrooms. Place in
oven for 30 minutes or until egg is set. Eggs will puff up while
cooking but will deflat when you take it out of the oven. |

you haven't tried the frozen croissants at Trader Joe's, you and mom
are in for a delectable treat. But don't trust us, read what the San Francisco Chronicle taste testers
had to say about these delicious pastries. And then run out to Trader
Joe's - both the plain and chocolate croissants are to die for.

Lemonade (with Rosewater)
There's
nothing quite as refreshing as fresh-squeezed lemonade. This one will
take you right back to the lemonade stands of your childhood. For an
exotic flair, add a splash of diluted rosewater, available at Middle
Eastern grocers.

1 cup water
1 cup sugar (I used TJ's Organic Sugar which is evaporated cane juice)
1 cup fresh lemon juice (about 5 lemons)
5 cups water
2 cups crushed ice
Optional: 2 Tbsp rosewater (please use distilled rosewater, not diluted rose oil)
1. Combine 1 cup water and the sugar in a saucepan over medium-low heat and stir until sugar dissolves. Remove from heat.
2.
In a pitcher or other container, combine the sugar syrup you just made
with the lemon juice, 5 cups water, ice, and rosewater.
3. Taste
and adjust for sweetness, adding more water if desired. |
